Sammy’s quality is guaranteed by the Consorzio di Tutela del Pomodoro San Marzano dell’Agro Sarnese Nocerino, which promotes the following objectives:
Promote and implement an appropriate policy of concentration of supply.
The consortium is driven by a strong cooperative spirit and aims to continually improve product quality and adapt the volume of supply to market requirements.
Promoting the improvement of cultivation techniques.
The Consortium practices respect for traditional environmental conditions and promotes the use of continuously improved cultivation practices and production techniques to give the product the optimal requirements for processing and packaging.

The evolution of consumer demand for healthy, safe and high quality products favours and opens up interesting economic development prospects for local producers.
Sammy’s exceptional organoleptic characteristics
The tomato plants and berries of the San Marzano 2, KIROS variety and those of the improved lines we allow to be used in growing the San Marzano Tomato of Agro Sarnese Nocerino with Protected Designation of Origin PDO (P.D.O.) must meet the following requirements:
1. CHARACTERISTICS OF THE PLANT:
- Indeterminate growth of any height. Determinate varieties are excluded;
- Foliage well covering the berries;
- Scaled maturation;
- Unripe berries have a “green shoulder”.
2. CHARACTERISTICS OF TOMATO BERRIES USED FOR PEELING:
a) berry with two or three locules, elongated and cylindrical in shape tending to pyramid form with a length of 60 to 80 mm measured from the attachment of the peduncle to the stalk scar;
b) angled/roundish cross-section;
c) axial ratio: not less than 2.2 + 0.2 (measured between the length of the longitudinal axis and that of the major transverse axis at the widest traversal midsection);
d) absence of peduncle;
e) red colour typical of the variety;
f) easy detachment of the cuticle;
g) reduced presence of placental voids;
h) pH maximum 4.50;
i) refractometric residue at 20°C equal to or greater than 4.0%;
l) limited presence of thickened vascular bundles in the petiolar zone (pincus).
THE PERMITTED TOLERANCES ARE:
– point a) fruits of slightly irregular shape, but typical of the variety, provided that they do not affect more than 5% of the batch;
– point d) peduncles: maximum 1% of the fruits;
– point e) yellow arc up to a maximum of 2 cm2 per fruit provided that they do not affect more than 5% of the batch;
– in point i) a tolerance of -0.2 is permissible for the refractometric residue at 20°C.
